Which are the Most and Least Contaminated Crops

Farmers are spraying many crops with pesticides, so which are the most and least contaminated crops? Recently, the Environmental Working Group’s 2021 Shopper’s Guide to Pesticides in Produce was published. The various fruit and vegetables are also called the “dirty dozen”. You see from this readily that the most contaminated crops are strawberries, followed by spinach and kale, collard and mustard greens. Nectarines, apples and grapes are next followed by cherries, peaches and pears. The list is made complete by bell and hot peppers, celery and tomatoes.

Safety of food

This means that it is not safe to eat any of these fruit and vegetables from regular crops, as they are all contaminated by pesticides. It is advisable to exchange these crops and buy the organic version of each instead. This is easy to do, and I have done this for years. If you have a garden or access to a community garden, you can also grow some of them yourself.

What pesticides do in the body

People can acquire pesticides orally as contamination of crops. But people can absorb them as well by inhalation or through the skin. People affected by pesticides may complain about a sore throat, a cough, eye and skin irritation. They also may develop a headache, loss of consciousness, diarrhea, nausea and vomiting. In the worst case there can be profound weakness, seizures and death.

You may think:” Why worry? There is probably just a little bit left, and this surely will not harm me.” But make no mistake: many of the pesticides are hormone disruptors, and that “little bit” does matter!

Action of hormone disruptors

Hormone disruptors may have a molecular structure similar to estrogen. As a result, laboratory analysis may show smaller semen counts in males causing infertility.  Women can develop cysts in the ovaries, menstrual bleeding abnormalities and breast cancer. With pregnancy pesticides can cause early miscarriages. In addition, women can also have fertility problems as a result of hormone disruptors.

One way to find out what pesticides (insecticides) are doing to the body is to do a comparative study. In France researchers compared cancer rates between people who consumed organic food and others who ate regular food (treated with pesticides). Researchers recruited 68,946 French adults for the study. More than ¾ of the study population were women in their mid 40’s. Researchers divided these subjects into 4 groups depending on how many of 16 organic food groups they were consuming.

Details of the French study (organic food intake versus non-organic food intake)

First of all, the type of foods included fruit and vegetables, ready-to-eat meals, meat and fish, vegetable oils and condiments, dietary supplements and other products. Also, the investigators followed this population for an average of 4 ½ years. Finally, during that time 1,340 cancers developed. 459 breast cancers occurred, 180 prostate cancers, 135 skin cancers, 99 colorectal cancers and 47 non-Hodgkin lymphomas.

Those who ate the most organic food developed 25% less cancer on average. When it came to Hodgkin’s lymphoma, organic food consumers developed 73% less of it than people on regular food. Postmenopausal breast cancer was 21% less frequent among those who had the highest amount of organic food.

The least contaminated fruit and vegetables

The Environmental Working Group’s 2021 Shopper’s Guide for the least contaminated fruit and vegetables lists the following. Avocados, sweet corn, pineapples and onions. Papayas, frozen sweet peas, eggplant, asparagus, broccoli and cabbage are next. Finally, kiwifruit, cauliflower, mushrooms, honeydew and cantaloupe complete the list of the least contaminated crops. This means that you can buy these crops without concern whether or not you should buy the organic version. It is good to know what is acceptable and what you need to avoid by buying the organic version.

GMO foods and Roundup

It is interesting that there is no law in the US and in Canada that GMO foods should have a label that identifies crops with genetic modifications. This is changing rapidly as people realize that in many countries of Europe all GMO foods require labeling. Here is a publication that shows that the GMO labeling campaign is gaining momentum.

Genetically modified corn and soy contains the Bt toxin; it has been found in babies as mentioned in this article. Bt toxin damages the small bowel (the ileum) through Cry1Ab (the protein produced in genetically modified corn and soy). This in turn disables the absorption of vitamin B12. We know that this causes anemia. Historically the cause of pernicious anemia was due to a lack of vitamin B12 absorption.

Effects of Roundup

In a publication dated April 2013 Drs. Anthony Samsel and Stephanie Seneff discuss the effects of Roundup. They noticed that glyphosate inhibits the cytochrome P450 (CYP) enzymes in the liver. This is a crucial detoxification enzyme complex. When toxicity studies of glyphosate in mammals emerged, this was not common knowledge. The CYP enzymes in the liver are important to metabolize and eliminate estrogens and also help to detoxify xenobiotics, which are estrogen-like substances (residues from insecticides).

Glyphosate amplifies the effect of environmental toxins

Thus glyphosate (=” Roundup”) amplifies the damaging effect of environmental toxins and chemical residues from non-organic food that we eat. Researchers have shown a build-up of estrogens and xenoestrogens that are responsible for the development of many cancers (atypical Hodgkin’s lymphoma, breast cancer, prostate cancer, colon cancer etc.). Based on this data it makes sense to switch to as much organic food as you can afford. Organic food does not contain Roundup. For the sake of your health at least stay away from the “dirty dozen”!

Consumption Of Organic Food Reduces Cancer Risk

There are fewer carcinogens in organic food, which is likely why consumption of organic food reduces cancer risk. In an extensive study from France a large number of patients received questionnaires about their organic food intake.

The study was also reviewed by CNN using more popular language to describe the findings.

Most noteworthy, those who ate the most organic food developed 25% less cancer on average. When it came to Hodgkin’s lymphoma, organic food consumers developed 73% less of it than people on regular food. Postmenopausal breast cancer was 21% less frequent among those who had the highest use of organic food.

There are a number of factors regarding non-organic food that should make us pause to think.

Antibiotic use in agriculture

Milk and milk products are not as innocent as in the past when no marketing boards were around. Animals are no longer freely roaming on green pastures, but they exist in high-density facilities and they need antibiotics to prevent infectious illnesses. So the story goes. In reality farmers have found out that antibiotics and bovine growth hormone will both increase milk production. The manufacturers apply the profit principle and the result is that the consumers of milk and milk products have a change of their bowel flora from the antibiotic residues, which can cause heart attacks. The bovine growth hormone from milk and milk products causes breast cancer and prostate cancer. If you buy organic milk and milk products, you will not consume bovine growth hormone or antibiotic residues.

Immune disruptors

We know for several decades that insecticides used in agriculture on a large scale are accumulating in the body of the consumer and act as immune disruptors. The farmer feels he has to defend his crop against insects and sprays with various insecticides. Among the fruit with heavy spray residues are strawberries and apples.

Heavy metals

A study of the Consumer Reports’ from August 2018 examined baby foods. High levels of heavy metals like mercury, lead, arsenic and cadmium were detected in baby foods. Exposure to even low levels of heavy metals can lower a child’s IQ by 5 points.  Heavy metals have shown an association to behavior problems, to autism and to causing attention deficit hyperactivity disorder (ADHD). A study from New Zealand looked at how people who were exposed 4 decades earlier to heavy metals were doing when having an average age of 38 years.  565 New Zealanders showed measurements of high levels of heavy metals as children. Their IQ’s were lower than the average for their age and their socioeconomic status was below that of their parents.

Arsenic levels also high in organic food

It seems like heavy metals were high in both non-organic and organic baby food samples. Arsenic rice comes from inadvertent, but deliberate human poisoning. The Consumers Report explains that high arsenic values showed up in rice grown in these states: Arkansas, Louisiana, Missouri, and Texas. These are the same states, where cotton plantation covered the countryside in the past. The U.S. has been the world’s leading user of arsenic. Since 1910 farmers used about 1.6 million tons for agricultural purposes. Since the mid-1960’s they used only half of this amount. Although there was a ban of arsenic use as an insecticide in the 1980’s, residues from the decades of previous arsenic use still linger on in agricultural soil today. If organic rice is grown in these 4 contaminated states, it is not unexpected that even organic rice would contain high levels of arsenic.

The south-central region of the US was an area where cotton was the mainstay of agriculture for a long time. This is a crop where heavy treatment with arsenical pesticides was in use for decades in an attempt to combat the boll weevil beetle.

Rice was particularly high in arsenic, both in baby food as well as in adult food. Basmati rice from California, India, and Pakistan had on average half the amount of arsenic. Sushi rice from the U.S. was also low in arsenic.

Arsenic in chicken

A subsidiary of Pfizer produced the arsenic-containing drug, Roxarsone. This is an organic arsenic compound that accumulates in the liver of chickens. A synonym for Roxarsone is “3-nitro”. The full chemical name is 3-Nitro-4-hydroxyphenylarsonic acid.

When you read the fine print of the FDA website, it reveals that originally it allowed 3-Nitro® to be marketed in 1944 based on negative toxicity studies on rodents. The drug was approved again in 2009 for combination use with other drugs for suppression of coccidiosis, a cause of diarrhea in chickens. As 3-nitro is an organic arsenic compound. Researchers in the past believed that it would be non-toxic. So, the assumption was that it was safe to allow this feed supplement for chickens. It turns out that with more sensitive newer testing methods scientists from the FDA’s Center for Veterinary Medicine (CVM) and Center for Food Safety and Applied Nutrition (CFSAN) examiners found that organic arsenic compound metabolize in the chicken into cancer-causing inorganic arsenic compounds.

Chicken farmers use arsenic compounds to stimulate growth and to prevent the transmission of infectious diarrhea. If you don’t want to be a victim of the industry, I suggest you switch to organic chicken. It will be arsenic-free.

The “dirty dozen”

Originally the most polluted fruit and vegetables were termed the “dirty dozen”, but now the list is longer and includes 15 of the most polluted crop. They are: apples, peaches, nectarines, strawberries, grapes, celery, spinach, sweet bell peppers, cucumbers, cherry tomatoes, sugar snap peas (imported), potatoes, hot peppers, kale, and collards.

It is common knowledge for some time that certain foods contain more pesticide residues than others. Some of these fruit and vegetables contain between 13 and 15 different pesticides from spraying. Potatoes rank on top of all of the crops with high contamination.

Why is it important to know which crop has high pesticide contamination? Pesticides are immune disruptors. On the one hand vegetables are healthy for us, on the other hand they contain residues from insecticides and herbicides that have estrogen-like activities called xenoestrogens. They are are causing breast cancer in women and prostate cancer in men. If you replace all of these highly contaminated fruit and vegetables with organic ones, you will have reduced your cancer risk by 25%!

Changing over to organic food, as consumption of organic food reduces cancer risk

If you want to avoid Roundup, xenoestrogens and GMO foods, you need to switch from regular foods to mostly organic foods. Throw out all the foods in your fridge that are not organic and that contain MSG in it’s many disguises. MSG is an excitotoxin, which kills brain cells. These suggestions are also what Dr. Paula Baillie-Hamilton is recommending.

Organic foods do not contain any of the problematic GM foods. They are free of rBGH, xenoestrogens, residual herbicides or residual insecticides. Switch to either organic milk and milk products or goat milk and goat milk products. Another choice would be “milk” products based on pea protein, but not on soy protein. As fatty tissue releases some toxins, it is advisable to use psyllium seed husks as a fibre source supplement to bind the toxins in the gut for elimination.

Switching to organic food

I explained in detail how these cancer statistics come from traces of arsenic in chicken and rice, xenoestrogens from pesticide residues in non-organic vegetables, heavy metals, GMO produce and Roundup. It is time to take food seriously and switch to organic food. I have done this since 2001. Read labels carefully. Manufacturers often use the term “natural” to give a product a virtuous gloss-over. If you find that not all fruit or vegetables are readily available as organic produce, stay away from the “dirty dozen” and make use of the “clean fifteen”. You have a good variety to choose from: sweet corn, avocados, pineapples, cabbage, onions, frozen sweet peas, papayas (as long as they are not genetically modified), asparagus, mangoes, eggplant, honeydew, kiwi fruit, cantaloupe, cauliflower and grapefruit.

Want Some Arsenic In Your Chicken?

In January the news came out that the FDA had allowed a cancer-causing arsenic compound to be used as a growth stimulator in broiler chickens. This news story reported that about 70% of US chickens were affected by this method.

A subsidiary of Pfizer produced the arsenic-containing drug, Roxarsone. This is an organic arsenic compound that gets accumulated in the liver of chickens. It is also known by the name of “3-nitro”. The full chemical name is 3-Nitro-4-hydroxyphenylarsonic acid.

The FDA came up with a question and answer section on their website. The FDA stated the following:

“FDA announced that Alpharma, a subsidiary of Pfizer Inc, will voluntarily suspend sale of the animal drug 3-Nitro® (Roxarsone) in response to a new FDA study of 100 broiler chickens that detected inorganic arsenic, a known carcinogen, at higher levels in the livers of chickens treated with the drug 3-Nitro® (Roxarsone) than in untreated chickens. FDA officials stress that the levels of inorganic arsenic detected were very low and that continuing to eat chicken as 3-Nitro® is suspended from the market does not pose a health risk.”

The website explains further that the drug was approved to treat coccidiosis, an infection that can affect the gut of chickens. It should be pointed out that this parasite occurs more often in the crowded conditions of concentrated animal feeding operations. The FDA statement goes on to say that “3-Nitro® is also approved for weight gain, feed efficiency and improved pigmentation in chickens”. What this means is that the farmer has to spend less money of feed and the chickens still gain considerable weight. They also look pretty from the outside with nicely pigmented feathers, but as the reporter noted in the beginning of this blog the meat “tastes weird, stringy, just…funny”.

Now the FDA logic comes into play: it is called the “Delaney Clause for new animal drugs”. You can read about this in the FDA link about questions and answers. Essentially what this says it that the FDA cannot allow a drug to be approved, if an animal comes down with cancer. But it is legal to use a drug as long as it does not kill the animal or the FDA does not detect the drug in any food from the animal.

The new experiments showed that the liver and kidney inorganic arsenic levels were higher than the levels in the muscles. The muscle tissue levels of inorganic arsenic could not reliably be determined with the methods developed for liver analysis. But total arsenic compound tests were successful and were substantially lower in muscle than liver or kidney tissues.

The FDA concluded from this that continuing to eat chicken meat from chickens treated with 3-Nitro® does “not pose a health risk”.

Messing with our food

To me this is just one example of how the agro industry, Big Pharma and the FDA are co-operating in messing with our food. The envelope is being pushed to the point where administrative language is used to dispel any common sense that might shed a little bit of doubt on the legality of what’s happening in front of our eyes. There are a few points that I would like to raise in this regard.

1. A small amount of a carcinogenic substance in chicken meat is still a poisonous substance. Instead of having 35,660 cases of liver cancer and 61,560 kidney cancer per year in humans you may reduce the amount by 5,000 to 10,000 cases per year. But it is simply not acceptable to put a known cancer producing substance into human food. The reason liver and kidneys are affected more by carcinogens in chickens or in humans is because the liver and the kidneys are the detoxification organs that try to remove the carcinogen from the body and in the process store them in these organs.

2. There should not be a difference between lives saved in the US and lives saved abroad. Just because Big Pharma wants to continue to make a profit with this cancer producing chemical they are allowed by the FDA to continue to ship 3-Nitro® to chicken farms in other countries around the world. As long as this is the case, the meat that comes back to the US from China should be labeled as having been “exposed to a cancer producing substance”. You simply cannot have it both ways; if you export it, it should be labeled when it comes back, and the warning should be made to trade partners about carcinogenic properties.

3. Antibiotics have been used to stimulate growth in animals destined for slaughter. However, this practice has led to superbugs that can attack consumers. One way around this is to use non-antibiotic substances to prevent infections among herds of animals. The practice of using growth hormone-like substances, antibiotics or heavy metals should be abandoned.

The solution is organic food for now

At this point you do not have many options left. You can become a hobby farmer and raise your own chickens, pigs and grow your own vegetables and lettuce. But very few of us are having this option!

Your next option is to only buy organic food. That is what I have been choosing to do more and more for the past 5 years, strictly so for the last 3 years. I find organic food tastes the way my grandmother used to cook. When I compare regular chicken with organic chicken, there is a huge difference in taste.

My hope is that standard farming techniques will change in the future when more people choose organic food and the market forces farmers to pay attention to the wish of the consumers. At that point it may be safe to switch back to regular food. But as long as I read horror stories like the one above, I will protect myself by sticking to the organic alternative.

Conclusion

The story about inorganic, cancer-producing arsenic being allowed into our food since 1944 is only the tip of the iceberg. We have been reassured that growth hormone-like substances would be safe when in reality they cause autoimmune diseases. We know that antibiotics and heavy metals that are used to stimulate growth in animals can cause problems for the consumer: superbugs that are a side effect of antibiotics can cause serious infections in humans; heavy metals that we eat together with the meat of farm animals can poison our metabolism and cause toxic reactions. None of this should be allowed, but it is part of “standard farm practices”. All I can say at this point: protect yourself by eating organic foods.

Preserving Our Energy

We are all aging, and as we do we are gradually losing energy until we reach our last breath. Here I like to review where our energy comes from and what we can do to preserve our energy. When we preserve our energy we are in fact also slowing down the aging process and this in essence is the approach to anti-aging.

Mitochondria are power packs of energy

Each of our body cells has many mitochondria to give us energy. Some organs are more demanding. They are the main players in our body like the brain, the heart, the liver or the kidneys. Their cells have thousands of these energy packages. Without the mitochondria there would be no energy available to these key organs to perform all the work they do. They allow us to think and produce brain hormones, to contract our heart muscle and pump the blood through our arteries. They are organs like the liver that are in charge of all of the major metabolic reactions or the kidneys that filter our blood for impurities and eliminate them in urine. Mitochondria can be likened to our power bundles that give our organs and us energy to get through life.

Get enough sleep

Sleep is an energy rebuilder. But it has to be deep enough and long enough, and there has to be enough REM sleep to give us the feeling that we had a refreshing sleep. As we age some of our hormone production slows down. One of those substances is melatonin. It is crucial for good and restful sleep. If our body is not producing enough, we can supplement with small dosages like 3 mg orally to help our body to initiate sleep. It is not an addictive substance. It is the body’s own hormone. Should you wake up later in the night, you could take another 3 mg of melatonin. There is no risk either to feel tired or “hung over” after taking melatonin.

Exercise regularly

The cheapest energy you can get is by exercising regularly. When you exercise on a treadmill, go jogging or go for a brisk walk you condition your heart, improve your lungs; in short you develop cardiovascular fitness. At the same time your muscles are strengthened with isometric exercises. You are optimizing your energy flow. In the process of exercising you create a stimulus for your mitochondria to multiply in the affected tissues. This applies as much to your muscles as it does to your heart and to your lungs. You will find that your muscle strength increases. With exercise you spend energy, but you feel more energetic from it because your body is being tuned up.

Manage stress

Self-hypnosis is a simple way to allow your whole body to relax. However, the various forms of yoga will do the same thing for you. Meditation is another way of finding peace and tranquility. All of these methods will re-energize you. They calm your brain, help you to cope with stress and rebalance your hormones at the same time.

Lifestyle

You need a lifestyle that is conducive to keeping your energies. Listed here are several factors that interfere with energy production.

  1. Smoking: If you smoke, you burn up energy with every cigarette you consume. You interfere with the oxygen transport through your lungs, but the chemicals that poison your system also poison the mitochondria of the cells. By smoking you are destroying your power packs. Pollution damages your lungs in a similar fashion as smoking does, but it is a slower process. There are a number of big cities with severe air pollution and they may not be worthwhile visiting.
  2. Sugar and starchy foods: Back in the 1970’s based on the Framingham Heart Study it was thought that hardening of arteries would be due to an accumulation of cholesterol from fat in the diet. Saturated fatty acids were accused to be the culprit. A low fat diet was supposed to be the solution. But the end result was the obesity and diabetes wave that we still see now. There had to be another explanation of where hardening of the arteries came from. Banning fats did not lead to better statistics. The new observation was that a low carb/medium fat diet was associated with low heart attack rates, low stroke rates, and even low cancer rates. Researchers also found the real culprit: They are sugar, starchy foods and processed foods. Sugar and starchy foods are metabolized in the liver into LDL cholesterol, triglycerides and they also oxidize LDL cholesterol. This starts a vicious process of inflammation of the lining of the arteries with fat deposits into the wall of the arteries. By eating the wrong foods we interfere with our body chemistry to the point where free radicals are produced that attack everything in us including our mitochondria.   3. Alcohol: the famous one glass of red wine for women and two glasses of red wine for men is supposedly keeping us younger for longer. This is true for the resveratrol in the red wine, which is a powerful antioxidant. But to say that alcohol itself would prolong your life is a white lie. Alcohol is a nerve and cell poison; it robs you of energy. I take the resveratrol as a supplement from the health food store to protect my system. I stay away from alcohol.

Keep the arteries open

We need healthy arteries to pump blood through all of the branches and deliver oxygen and nutrients to the body cells. Unfortunately, as we age our arteries tend to get deposits that make them more narrow, and this could also raise our blood pressure. The end result is that less nutrients and oxygen will reach our body cells. We perceive that something is wrong by not feeling as energetic as usual. Simple lifestyle changes as mentioned below can improve our circulation and lower our blood pressure. Chelation therapy has also been shown as helpful in the TACT study.

Get rid of inflammation

Dr. Paul Ridker found that approximately 50% of patients with heart attacks had a normal cholesterol level. He was looking for a more meaningful screening test and found it in the C-reactive protein. If the test result was higher than 3 there was a high probability that there was inflammation somewhere in the body, but a test result of less than 1 was normal. In the meantime scientists have learnt that the C-reactive protein is a very sensitive tool to measure inflammation in the body, but it is not specific for heart attacks. It is also positive in people with arthritis, cancer, and autoimmune diseases. Chronic inflammation is also destroying immune cells: this explains the development of cancer as the end stage of chronic inflammation.

Chronic inflammation robs you of energy. We can do a lot with natural anti-inflammatory supplements to quench inflammation.

Preserve your immune system

We can strengthen our immune system by exercise, taking vitamin C regularly and by taking vitamin D3 supplements to just name a few. DHEA, the precursor hormone from the adrenal gland also helps stimulate the immune system.

Balance your hormones

As we age we loose hormones one by one. With melatonin this starts happening after the age of 20, with DHEA and growth hormone after you are in your mid thirties. Women start to get into menopause at the age of 45 to 55, but this can occur earlier or later. Men are going through their hormone change (andropause) at the age of 55 to 60. Both, women and men know when they are entering their hormone change because of a lack of energy and a few other unpleasant symptoms. Women get hot flashes. Men get grumpy, have erectile dysfunction, a lack of sex drive, week muscles and slower thinking. If you feel those symptoms, seek the help of a naturopath who is knowledgeable on bioidentical hormone replacement. Chances are that your regular doctor will want to prescribe synthetic hormones unless you can find an anti-aging physician. If your blood tests show deficiencies in the sex hormones, you will need to get a bioidentical hormone prescription. They are usually dispensed as creams, which you apply to your chest wall or non-hairy forearms in the morning. After 4 weeks your energy will be back, and your body will function normally again. All the body functions that you thought were gone forever just needed that extra stimulus from the missing bioidentical hormones.

Organic, GMO free food

I was tempted to just write “good food”. But this may be confusing to people. It is difficult anywhere in the world to get good food. Often insecticides and pesticides contaminate fruit and vegetables, which function as xenoestrogens blocking hormonal receptors. These residues are toxic for your body, and they are destructive to your energy. Organic food with the USDA certification or any independent certification is the best way to ensure that you get a good food product. I take this seriously and pay the extra dollar. We do not need plates heaped with foods. Small helpings of good quality foods are more important for our well-being.

Treat depression and mental disease

People who are depressed will complain of a lack of energy. Their brain circuits are constantly in overdrive being busy with negative thinking. Cognitive therapy can help depressed patients to face their negative emotions. It is a learning process of thinking step by step to distinguish what is real and what is magic thinking. It is important to seek qualified help. Depressed patients distort the way they think, but cognitive therapy sets their thinking straight (Ref.1). When the thinking is normalizing, the drained energy returns, people sleep better again and they can use the energy to move forward.

Positive thinking

Negative thoughts are draining you of energy. You want to stay optimistic within what’s reasonable. Be thankful for all the good things in your life. Minimize what’s negative, but think about positive solutions to get rid of energy draining parts in your days. Do this persistently until it becomes part of your life and you will have extra energy that you didn’t waste in negative thinking or by getting caught up in needless anxiety. Worrying does not get us anywhere, but it depletes our energy.

What can we do to prevent aging?

It follows from all that I said that anything that preserves energy would also prevent premature aging.

As mentioned, it is important to exercise regularly (gym, swimming, dancing, fast walking, jogging etc.). Have good, balanced nutrition, preferably organic food. Some supplements are also helpful: resveratrol, Co-Q-10; pages 100 to 103 of my book contain more vitamins and supplements (Ref.2). Use bioidentical hormones to replace what is missing. Get your 7 to 8 hours of sleep and don’t forget relaxation. Detoxify to get rid of toxins that would slow you down. Infrared saunas are one way to detoxify. It is helpful to consider chelation treatments. Last but not least have a positive outlook on life.

Conclusion

Our energy that we feel tells us whether we are staying healthy or whether we are at the verge of getting sick. It is best to maintain your energy at all times by doing a combination of things outlined above. You will retain youthful energy; you prevent cardiovascular disease, Alzheimer’s and even cancer. Most of all you have the energy to do the things you want and love to do.

I prefer to work on staying well and in the process I have the energy to do the things I want to do. Part of it is blogging, part of it is writing books, and part of it is dancing. The key is that I like what I am doing. I invite you to do what will keep you energized. Listen to your body.

The “Macaroni And Cheese” Myth

There is hardly a child that did not go through the macaroni and cheese phase. Now the maker of the Kraft’s dinner is in the news for their plan of removing artificial coloring and artificial flavors. This in itself is a positive step in the right direction. Although Kraft’s is painting the positive image of being concerned about the food quality for children, I think that the trigger for the change lies in the downward spiral of the sales of junk foods. Kraft’s is not alone with this. McDonald’s has been in the news having to close down franchises and losing business to Chipotle.

Chipotle has a slogan: “whole or nothing”, meaning whole foods, no antibiotics in their meats, everything fresh.

There also has been pressure from the informed consumer. Kraft’s probably responded to the Change.org petition where 365,000 signatures were collected asking Kraft’s to remove dyes from macaroni and cheese.

Kraft did some research and found that it was indeed possible to keep the taste the same, while improving food quality by replacing food coloring with paprika, annatto and turmeric.

So, let’s assume that this switch will be successful, which itself is positive. But what are kids actually eating? Are noodles (essentially a form of pasta) and processed cheese healthy? What about missing protein, vitamins, vegetables and lettuce?

Macaroni

I have explained before that starchy food is essentially the same as sugar. Would you say that sugar is healthy? No, because it oxidizes LDL cholesterol causing hardening of arteries leading to inflammation in the body and causing the pancreas to produce a whole load of insulin leading to hyperinsulinism with reactive hypoglycemia. This also undermines adrenal gland function causing adrenal fatigue.

Cheese

Since 1993 it is legal for the dairy industry in the US to use bovine growth hormone from Monsanto. And, yes, it is contained in processed cheese that finds its way into the cheese portion of macaroni and cheese. In Canada or Europe cheese does not contain bovine growth hormone, as it is illegal.

Here is a link that states that bovine growth hormone from dairy in the US is one of the causes of breast cancer. Now the Kraft’s macaroni and cheese story takes on a completely different twist: the longer you are exposed to this weak carcinogenic effect of cheese (due to rBGH or rBST) the higher the likelihood of developing breast cancer in girls later in life. In boys a similar glandular tissue is the prostate gland and prostate cancer in older men is common. According to the American Cancer Society research has already shown a connection between rBGH/rBST and prostate cancer later in life. I find the increased risk of breast and prostate cancer in the US concerning. However, starchy foods (the macaroni part of macaroni and cheese) are known to cause cancer of any kind because of the insulin response. So, macaroni and cheese is not an appropriate, healthy food.

Missing vegetables and salad

We need the vitamins from vegetables and salads to counter any effect of the carcinogenic effects of macaroni and cheese. Don’t stop at the pasta aisle of the supermarket.

You will need to pick up some vegetables before you go home. Often kids are reluctant to consume vegetables. One alternative is to run green leaf vegetables through the blender, add an orange and a piece of banana for better flavor and offer it as a smoothie drink. What does this do? It adds Vitamin A, Vitamin C, beta-carotene, calcium, folate, fiber, phytonutrients and antioxidants.

Organic food

Despite the effort of changing macaroni and cheese and skipping artificial colors and flavoring substances, it does not measure up as a healthy food. Introduce new options that pack more flavor than any bland pasta product. Shop for organic food to avoid traces of pesticides and herbicides. Get used to the flavor of a Mediterranean diet without starchy foods or sugar. This diet has been associated with a long life and less disabilities in old age. So, replace the macaroni with a piece of chicken or lean grass-fed beef. Replace the cheese with vegetables. Buy an imported cheese (Parmigiano or cheddar, either organic or imported from Canada or a European country), which can be used over the vegetables. And –voila! – You got another meal, not macaroni and cheese!

It seems that concentrating solely on changing coloring and food additives, we lost our vision of what healthy food really is. We get so worked up about the old, familiar tastes, even calling it “comfort food”, that we do not care any more about the quality of our food. This should be something, which the consumer is entitled to have, and it should not be left to the maneuvering of the food industry. We need to take the control of our kitchen back into our own hands. Dr. Victoria Maizes, executive director of the University of Arizona Center for Integrative Medicine and a professor of medicine and public health, asked a simple question: “What’s wrong with Girl Scout cookies?” In this article she explains her concern about GMO, sugar and trans fats in the cookies Girl Scouts sell. She makes the link between cookie consumption and obesity, cardiovascular disease and cancer. You may not know all the intricacies of the human body, but whatever food you decide to swallow will decide which way your metabolism goes. Do you want to become hypoglycemic, diabetic or do you just want your metabolism to stay normal?

Conclusion

Macaroni and cheese is a topic that leads to a discussion of what quality nutrition should be in general. The gold standard is a Mediterranean diet, as this is associated with longevity. At the same time it is tasty. Adults need to be aware of the side effects of junk food that I mentioned above. Despite advertisements otherwise, macaroni and cheese is not a quality food as it is deficient in vital nutrients, such as quality protein, minerals and vitamins.

Two Approaches To Heart Disease

Over the years I noticed that there are two approaches to heart disease that people and physicians seems to subscribe to.

1.The conventional approach to heart disease

The patient essentially ignores health advice, may smoke cigarettes and eat in a lot of fast food restaurants. People who do not care about their heart drink sodas, eat lots of sugar, starch and processed foods. They may think that they are invincible. Famous politicians have subscribed to this type of approach including former vice president, Dick Cheney.

But the big surprise comes when acute chest pain hits and an ambulance has to be called. We are lucky in the industrial countries where a 911 service is available. You call that number when in distress and an ambulance with all the modern equipment will rush to you. The problem though is that you have neglected your arteries for all those years and it is likely that one or two of the three coronary heart vessels are severely narrowed so much that your heart reported chest pain. This pain signals that one area of the heart muscle was not getting enough oxygen and nutrients.

On arrival at the hospital the emergency physician sees you. Nurses put monitors up, attach electrodes to you, and IV-lines are put into your veins, just in case things get worse and they would need to give you quick life-saving medicine intravenously. They have also given you an oxygen mask, and after 30 minutes or so you feel much better. A cardiologist has been called in by the emergency physician and will assess you.

This will very likely be the verdict: “We have to do a coronary arteriogram where I advance a thin catheter through your femoral artery backwards to where the coronary arteries originate from. We can then study each coronary artery separately and determine whether an angioplasty needs to be done.” Upon your questioning he explains that an angioplasty is a procedure where a catheter is advanced through a new clot that often forms during a heart attack and a stent is left behind that will keep the previously blocked off coronary artery open.

Within an hour the procedure will be completed. The cardiologist will explain that he found significant narrowing, such a san 85% narrowing in the anterior descending coronary artery and a second lesion in the right coronary artery with maybe 55% narrowing. He has stented both of these arteries successfully. But he warns you that the stents may close off, if you are unable (or rather unwilling) to change your lifestyle. He also will be very specific with what he meant: Quit smoking immediately, get into a regular exercise program and adopt a strict heart healthy diet like the Mediterranean diet. They would keep you overnight just to observe your heart rhythm and blood pressure. In the morning, if everything is OK he will likely discharge you.

Comment: Unfortunately this scenario is all too familiar to me having worked as a family physician doing my rotations as an emergency physician in a community hospital for 16 years. I found that people tended to NOT think preventatively unless they were forced to. When an acute event like a heart attack happens, a higher percentage of people is committed to prevention, but medical people call this “secondary prevention” as this prevention was only started after a close call. Our sample patient above could have developed a serious arrhythmia (irregular heart beats after a heart attack) and suddenly slipped into a coma and died before the interventional cardiologist could have placed the stents.

Primary prevention is much more powerful and this is what I like to cover next.

2. The preventative approach to heart disease

Most people never have to be rushed to the hospital with chest pain. They engage in various ways of “primary prevention”.  So, what exactly is this?

They keep very active, like walking or jogging, dancing, working out in a gym, biking or swimming etc.

They also like a healthier than normal lifestyle: eat at home as much as possible, and many adopt to buy only organic food. Why, you may ask? Organic food does not contain insecticide residues that resemble estrogenic substances (so-called “xenoestrogens” which accelerate hardening of the arteries). But organic food also does not contain GMO (genetically modified food). We know enough about GMO now to indicate to us that autoimmune diseases with inflammation of the arteries and the gut can occur. But the full impact on people’s health will not be known for several more decades. So why experiment with yourself? Buy organic instead. It is known to be safe.

Vitamins and minerals can be very useful supplements that also prevent premature aging of our blood vessels.

Anti-aging research has shown that with aging come various hormone defects. Melatonin is one of the first to go (in your twenties). But melatonin tables that are widely available in drug stores and health food stores can come to your rescue:  3mg of melatonin at bedtime will give you a good night sleep and provide powerful anti-oxidant effects. DHEA is an adrenal gland hormone that can be measured in your blood (or in saliva). In case it is low, it can be easily replaced with supplements. In the 50’s or 60’s women and to a lesser degree men will start to show thyroid under-functions. We call this hypothyroidism. Have your TSH and T4 levels checked and talk to you doctor about whether you need thyroid replacement, if the values are off.

It is somewhat more difficult to explain the rest of the hormones. But you know that women get into menopause and men about 10 to 15 years later will hit andropause, which is the male equivalent of menopause in women.  An easy way to check this out is by doing a hormone panel from just one tube of spit. Yes, it is a saliva hormone panel I am talking about. For women it is estrogen, progesterone, cortisol, DHEA and testosterone that should be analyzed. For men it is testosterone, DHEA, cortisol, estrogen and progesterone. I am aware that these are the same 5 hormones, but I listed them in the order of importance for women and men. I have followed a primary heart attack prevention program since 2001 and it seems to suit me well.  Just to check things out I had a carotid intima test, which showed no hardening of the arteries. Just two weeks ago my optician took images of the retinal vessels and found hardly any hardening of my retinal arteries. I scored high on a Bruce treadmill protocol in March of 2013 and my lipid VAT values were excellent indicating a low risk for a heart attack.

Conclusion

Prevention of a disease is always better than curing a disease, this applies to heart attacks as well. While you do something good for your heart, you are at the same time preventing strokes and many degenerative conditions like Parkinson’s disease, Alzheimer’s disease. In addition you also prevent cancer. It really is a good deal!

Long-Term Multistep Weight Management

In February of 2001 my wife and I attended an anti-aging conference in San Diego. The keynote speaker was Dr. Barry Sears who is the inventor of the zone diet. We had read a book from him before the conference and were excited to hear him speak in person. We liked the book; we liked the talk, so we cut out sugar, starchy foods and stuck to a diet where the calories derived 50% from low-glycemic, complex carbohydrates, 25-30% from lean meat, poultry and fish. Calories derived from fat were reduced to about 15-20% (there is hidden fat even in lean meat). No butter, but instead some lean cheeses and olive oil for cooking and in salad dressings. We shed both 50 pounds within 3 months without any hunger pangs. Our energy increased and this has stayed  this way ever since. There was no problem getting down with our BMI’s (body mass index) to 23.5 or 24.0, which is usually viewed as normal by the medical profession. We noticed, however, that when we did not exercise, there was a problem maintaining our normal weight.  We are under the care of an anti-aging physician who did special tests like fasting insulin, C- reactive protein, and hormone tests. They were all normal. We took up ballroom dancing really seriously having been inspired by “Dancing With the Stars”. This was 6 years ago. What started innocently with only a few basic ballroom lessons three times per week has now blossomed into dancing more than 10 different dance styles 5 times per week.

3 ½ years ago both of our energy levels were slowly going down, particularly after a long night of dancing. Hormone tests revealed the initial stages of age-related hormone deficiencies which did not come as a surprise , as  decreasing hormone levels was a topic discussed  in detail at the conference in San Diego in 2001 (we also attended several other anti-aging conferences on a yearly basis from 2009 onwards). With bioidentical hormone replacements these levels normalized within one year, our energy was back and our weight stayed normal. We enjoy travelling, but there can be problems with our multistep weight management program. We need to watch our diet (no toxins, preferably only organic food), and physical exercise may be less regimented. In 2008 we read Suzanne Somers’ book “Breakthrough”. We ordered urine tests for toxic metals and we were shocked that we had noticeable levels of mercury and lead. Since then we started to cut our salmon consumption from 3 to 4 times per week down to once or twice per week. To get rid of the heavy metals we started intravenous chelation treatments with vitamin C (10 Gm) and Glutathione (1250 mg) every two weeks. In July 2012 there were reports of radioactive salmon from the Japan nuclear disaster earlier that year in the Canadian media. After this news we stopped eating all fish and other seafood, not only because of radioactivity, but also because of other toxins like mercury, cadmium, PBC’s etc.  We do take high doses of molecularly distilled omega-3 fatty acids along with our other supplements. We also started eating mostly organic foods as we do not want to ingest insecticides, herbicides and other toxins.

We acquired body composition scales, which give information about fat percentage including visceral fat percentage, muscle mass percentage, BMI, weight and the basic metabolic rate. We wanted to define the end point of what our ideal body weight would be. We noticed that our dance program was not good enough to lower the BMI below about 23.5; using the body composition scales we noted that our body fat content was still too high and the visceral fat percentage was still in the 6% range. It took a prolonged trip to the US where we could not find enough dance events to decide that we would introduce a one hour gym program consisting of 30 minutes of treadmill, 15 minutes of upper body circuits, and 15 minutes of lower body circuits every day as a basis to our exercise program. Any dance activity would be just an additional exercise on top of the base exercise from the gym. It took only about 2 months before our fat composition decreased, our muscle mass increased, the visceral fat went to a normal at 5% and the BMI was now stabilized at the 21.5 to 22.0 range. We feel a lot more confident in managing our weight long-term without really thinking much about the weight. It is now a routine we follow, like an athlete would do to stay in shape. While nobody has a permanent guarantee to everlasting health, we do it to prevent the diseases we do not need in our retirement like diabetes, arthritis, heart attacks, strokes, cancer or Alzheimer’s.

What we did not know until after the 20th A4M Anti-Aging Conference in Las Vegas (mid December 2012) was that inadvertently we were protected from exposure to chemically modified wheat from 2001 onwards as we had cut out all refined carbohydrates and starchy foods (including wheat) since then. Unfortunately many Americans still expose themselves unknowingly to larger or smaller quantities of wheat, suffer from leaky gut syndrome with the associated changes in the immune system and the development of autoimmune diseases.

Personally, I believe that long term weight management is possible: you can turn older and hopefully wiser…not wider. The good news: it can be done. The bad news: this is not an instant fix, but a program that needs to be part of your lifestyle package.

Black Widow Alert For Organic Produce

Fresh fruit in winter has become the norm in supermarkets around the country. A significant amount of buyers seeks out organic produce for the lack of potentially noxious spray residues.
In the quest to combat insects that feast on their vines, growers of organic grapes nurture the black widow spider variety, which will prey on the vineyard pests in the sense of a biological pest control. Despite checks and handling measures to rid the grape bunches of spiders, more consumers have been spotting black widows on imported grapes. A Canadian Food Inspection Agency spokesman reported, that the numbers have been going up. The good news, however, is that bites have been infrequent, and more importantly, fatalities are extremely rare. Centers of the American Association of Poison Control recorded 13,000 bites in 1997 of which less than 1 % were fatal.
Nevertheless, the hazard is real, and people who are most at risk of suffering a fatal bite are children. Also the older patients who have a heart condition are at a high risk of severe complications. According to a recent study authored by Dr. A. Stibich, a dermatologist from the Newark-based University of Medicine and Dentistry in New Jersey, key signs of the toxin from a black widow bite are excessive saliva flow, tear flow, sweating, muscle tremors, a rapid heart beat and shock.

Medical treatment to deal with the symptoms and the pain is necessary. Most symptoms subside within two or three days.
For the consumer the most important message is caution. Black widows don’t only occupy fruit from the tropics, check out your organic grapes and look before you touch!
