Overuse Of Supplements Can Create Health Risks

The Dietary Supplement Health And Education Act of 1994 made it easier for people to acquire supplements and vitamins from health food stores. But since then there has been a proliferation of various products that are sold as supplements and not as drugs. It may give you the impression that all supplements are harmless, but this is not so. There are some supplements like vitamin A where you need to watch that you are not inadvertently overdosing, as toxicity is a problem; calcium supplements are also potentially toxic, if overdone. And amino acid supplements (protein supplements) can lead to an overdose of brain hormones. Here is a sample of some of the supplements that I would want you to watch.

1.Vitamin A toxicity:

Vitamin A is essential for normal night vision, for red blood cell production in the bone marrow and for the immune system. Here is a brief review about its metabolism. But while small amounts are beneficial for the body, high doses are toxic. In the 19th century the Arctic explorer Elisha Kane reported that consumption of polar bear liver caused severe headaches, drowsiness, irritability and vomiting within a few hours of ingesting it.

It is now known to be due to “pseudotumor cerebri”, a condition that mimics a brain tumor, but is caused by an acute overdose of vitamin A contained in liver (Ref. 1).

In the US where people eat enough meat, fish and dairy products, there is no overt vitamin A deficiency. Read this link to avoid overdosing with vitamin A in multiple supplements.

2. Vitamin C:

Vitamin C is an important antioxidant vitamin and is needed as a co-factor for many metabolic reactions. It is participating in the production of collagen and connective tissues, helps with fatty acid transport and is necessary for the synthesis of neurotransmitters in the brain (Ref.2). The lack of vitamin C is known as scurvy; symptoms include bleeding gums from fragile capillaries, delay in wound healing and impaired bone metabolism. Although in the earlier research it was hoped that vitamin C would prevent colds and cure cancer, more recent reevaluations found that it does not prevent you from getting colds, but it accelerates the recovery from colds by cutting down the recovery time by as much as 25 to 30% and it also does have some cancer protective effects (Ref.2). Higher doses seem to be more beneficial, but 1500 mg per day seems to now be the consensus of a reasonable upper dose limit per day.

What about kidney stones? Several studies in the past have warned about vitamin C being broken down in some people into calcium oxalate kidney stones. Here is a brief review of the literature with regard to kidney stone formation. A study regarding the DASH diet, which is used for people with high blood pressure, showed that the incidence of kidney stones is almost half for both men and women compared to controls on a normal North American diet.

There has been a concern among the medical community that vitamin C as a supplement would increase kidney stones (oxalate stones). However a 2014 study showed that when both vitamin C and vitamin E are taken as supplements, the kidney stone formation goes down.

Many inhabitants of industrialized countries including the population in the US and other countries are magnesium deficient and this can be a major factor for forming calcium oxalate stones. But it has been known for decades that those who develop kidney stones excrete more oxalates in their urine (so-called “oxalate excreters”). Here is a 1996 study that measured this in detail.

If you are taking in a lot of green smoothies from green leaf vegetables (spinach, kale, Swiss chard) that are high in water-soluble vitamins, you may not require any vitamin C supplements. In other words, think about what else you do and eat and add it up, so you do not exceed a total of 1500 mg to 2000 mg of vitamin C per day.

3. Calcium supplements:

Calcium is a key mineral in the body, important not only for healthy bone structure, but also to balance the electrolytes within the blood, in the extra cellular fluid space and within our cells. If calcium is low, the brain is more prone to seizures and the heart can produce dangerously irregular heart beats. We definitely need a balance of calcium! Because calcium is so central to our wellbeing, several factors work together to keep our calcium levels stable: the kidneys, the thyroid, the parathyroid glands, the adrenal glands, the bone as a reservoir of calcium, the gastrointestinal tract for absorption and a good, balanced nutrition. The chapter on “Vitamins and Minerals” of Ref.3 points out that 4000 mg of calcium per day definitely causes toxicity (hypercalcemia and milk-alkali syndrome).

Absorption is dose dependent meaning that only 500mg of calcium carbonate is absorbed at a time. Vitamin D3 deficiency leads to reduced calcium absorption. But with high doses of vitamin D3, which is now often recommended, more calcium is absorbed, so it is important not to take too many calcium supplements. They can also interfere with iron and zinc absorption and when more than 2600 mg of calcium is taken magnesium absorption is inhibited as well. Calcium can interfere with thyroid hormone supplements (take 4 hours apart) and may reduce the effect of calcium channel blockers, drugs used for angina or high blood pressure.  There is a balance between calcium stored in bone (99% of total body calcium) and the circulating portion of 1% of calcium in the blood. The parathyroid hormone and calcitonin are also involved in this balance. Hypercalcemia is the condition when calcium is too high. Common causes are the improper use of diuretics (thiazide diuretics), overuse of calcium carbonate supplementation (often for osteoporosis) and overuse of vitamin D3, which increases the absorption of calcium (Ref.3). 4. High protein diets and protein (amino acid) supplements:

Many protein supplements are available through health food stores and vitamin stores. The advertisers often state that our food would be substandard and these supplements would help “to regain strength”.  Athletes hope to get stronger muscles from amino acid supplements because they are the building block for protein that builds up muscles. Fact is that no supplements are needed when you eat balanced meals containing meat and fish and you exercise regularly. The protein in your food will be broken down into amino acids and your body metabolizes this into your own protein. Here is a website that reviews the subject of supplementation with amino acids.

It is clear from this that this is a rather complex problem. Vegetarians may require these supplements to replace protein for the missing meat intake. But the rest of us have to guard ourselves against overdosing with too much meat, amino acids supplements or protein supplements.

High protein diets (Atkins diet and others) have been glorified as being helpful for weight loss. But the long-term effect of such diets lead to chronic kidney damage in those with diabetes and high blood pressure as evidenced by protein leakage in the urine (called ”microalbuminuria”, Ref.4).

According to this reference the average protein requirement is 0.6 g of protein/kg body weight/day. This text comments that this would be compatible with the World Health Organization (WHO) recommendation for protein intake. For a person weighing 140 lbs. this translates into about 50 grams of protein per day. Here is a website that explains the upper limit of meat intake with the example of an 8-ounce portion of top sirloin steak.

Protein supplements have become very popular, but you need to be careful when you supplement with this that you do not get an overdose of amino acids. Amino acid profiling has been useful for physicians and naturopaths to examine deficiencies in children or adults checking for essential amino acids in the blood.  However, in the industrialized countries such as the US, Canada and others the larger concern is now the overuse of meat in our food (e.g. Atkins-like diets) and protein supplements. The same amino acid screening tests will find several of the ingredients (amino acids) in these protein supplements to be too high. In this case it is imperative to stop the protein supplements to prevent amino acid toxicity.

This study warns that not enough is known how performance-enhancing supplements affect the metabolism of the body. There are discussions that perhaps upper limits for amino acid supplements need to be established:

5. Creatine supplementation:

Other supplements of concern are creatine supplementation in the sports-minded and in athletes who want to build up muscle mass. Creatine is synthesized by the liver form amino acids derived from fish and meat that is broken down into the amino acids arginine, glycine and methionine. So, there is no shortage, but athletes and sports minded people want to push the envelope and take in additional creatine that helps their energy metabolism (ATP production) in the muscles to increase their performance (Ref. 5) Creatine is vital for the brain, the heart, the kidneys and the eyes (retina). It is a buffer for lactic acid during anaerobic exercise. Some of the side effects are muscle cramps, diarrhea, fluid retention and kidney failure when exposed to high heat and dehydration. There are no long-term studies of the use of creatine supplements, yet some athletes are taking them long-term.

Conclusion:

We are tempted by various merchants and infomercials to take in more and more vitamins and supplements including protein and amino acid supplements. But when you eat well-balanced meals, preferably organic food, you already have enough protein, nutrients, calcium, vitamin C and vitamin A contained in food. So you may be inadvertently putting a strain on your kidneys that have to eliminate whatever it is that is too much for your body to take. Your liver may also be quietly working overtime as well. Your brain gets overactive by the surplus of amino acids that are utilized by the brain to make brain hormones. Your system can only take so much; at one point a surplus of supplements will make you sick! So, be vigilant and think about what your regular food intake already provides. Do you really need that supplement or do you already get enough from your food intake? Are you falling for some marketing scheme? Remember, you are the steward of your own health!

Buying Into High Carb, Low Fat Myth Makes You Sick

If you are like most people, you probably still think that “healthy grains” like wheat are good for you and are “essential for a well balanced diet”. Ever since Kellogg’s introduced cereal for breakfast and the bagel was invented as a mid morning snack, which has captured the tastes of millions, the Agro Industry and the food industry have lobbied to have “healthy grains” in the food pyramid or on your plate. The very thought of “the daily bread” is deeply ingrained in our culture.

Other agencies like the Heart Foundation, the Academy of Nutrition and Dietetics (formerly “American Dietetic Association“) and the American Medical Association have reiterated this statement over and over until both the public and physicians accepted this as the truth. However, the scientific data does not support this point of view!  It has been a myth!

We are gradually learning that there has been a big misinformation campaign going on as far back as 1984 (and before) when a consensus panel came up with revised normal values for cholesterol and we as the medical profession were told (myself included) to treat high cholesterol levels much earlier and more aggressively than in the past with statins.

Big Pharma is still pushing for this. Now that I am retired for more than three years I can freely write about what is really going on. The truth has already leaked out, but it is not yet common knowledge.

I like to review the switch from the old school of thought that a high carb/low fat diet would be healthy to the new school of thought that a low carb/high healthy fat diet is healthy. Before you panic, sit back, relax and read what I am saying.

A brief history of the high carb/low fat diet recommendation

It was the Framingham Study, which is an ongoing study since 1948 where a large group of people was followed for decades to sort out what causes heart attacks and strokes and how one could develop a program of prevention. This objective at the beginning of the study was very noble and promising. However, as time went on the results from the Framingham Study that were published intermittently appeared to be more and more confusing.

First there was the lipid theory that was based on the observation that high lipids (called triglycerides) and high cholesterol in the blood would cause heart attacks and strokes. It was assumed that it must have been the fats in the diet that would have caused this. Based on this thinking the lipid theory of arteriosclerosis was formulated, a theory trying to explain how heart attacks were caused.

If this theory were true, a lowering of the blood lipids and cholesterol should have lowered the rates of heart attacks and strokes. Many large trials were done and the statins were developed to lower cholesterol. In a recent blog I have explained that this has not lowered the mortality rates from heart attacks and strokes, but instead of admitting that the researchers made a mistake, many are still doggedly holding on to the dogma of the lipid theory. The truth is that the lipid theory has not been proven to be true; the recommendation of a high carb/low fat diet has also not worked out to save lives by preventing heart attacks and strokes. In fact the opposite is true: older people with high cholesterol live longer and have less Alzheimer’s disease than those with lower cholesterol levels in the blood as Ref. 1 has explained in detail. Dr. Perlmutter mentioned a study from the Netherlands (Ref. 1, page78) involving 724 individuals who on average were 89-year old that were followed for 10 years. Those with high cholesterol lived longer than those with low cholesterol, exactly the opposite of what the lipid theory predicted! Specifically, for each 39% increase in cholesterol there was a 15% decrease in risk of mortality. Think about it: the brain and the heart have LDL receptors on their cell surfaces for a reason. The reason is that both vital organs burn fat and need cholesterol to build up the membranes of the brain and heart cells.

Despite this compelling evidence Big Pharma is in denial and you will still find the lipid theory of arteriosclerosis heavily mentioned on the Internet as the only “valid” explanation for how heart attacks and strokes would be caused.

Inflammation as the alternative explanation of arteriosclerosis

Since the mid 1990’s the first reports surfaced to explain that about 50% of patients with normal cholesterol levels still develop heart attacks. In these patients the C-reactive protein, an inflammatory marker, was very high indicating that an inflammatory process likely caused their illness.

Subsequently further research was able to show that the LDL cholesterol, when oxidized by sugar was responsible for clogged arteries in these patients. It also became apparent that diabetics have a much higher risk to develop heart attacks than patients with normal blood sugars. This led to the conclusion by several different research teams that the lipid theory was wrong and needed to be abandoned.

Instead a new theory has developed that explains that heart attacks and strokes develop in patients where free radicals have damaged LDL cholesterol. This oxidizes LDL cholesterol and leads to hardening of the arteries (arteriosclerosis). Sugar from increased carbohydrate intake has a lot to do with this: it leads to glycation of protein causing glycation end products (abbreviated as AGE’s).

This is an appropriate name as it really is the cause of premature aging, of developing wrinkles, of getting premature hardening of arteries and having a 50-fold risk of free radical formation. This in turn will lead to more tissue aging. LDL used to be thought of as the “bad cholesterol” (I myself have used that term in the past). LDL is now known to be the friendly and important transport form of cholesterol, which is sent from the liver to the brain and heart cells that need it for their metabolism. If LDL is oxidized, however, it becomes useless and the heart and brain cannot absorb cholesterol for membrane synthesis via the LDL receptors. The end result is that vital organs like the heart and the brain do not get enough oxygen and nutrients, which leads to heart attacks and strokes. The free radicals that are released from oxidized LDL cholesterol and that circulate in the blood cause an inflammatory response in the lining of the arteries all over the body, which you know as hardening of the arteries (arteriosclerosis).

This may sound complicated, but all you need to remember is that sugar and starch consumption lead to accelerated hardening of arteries in your body, which causes heart attacks and strokes.

Reassessment of what a heart healthy, brain friendly diet is

The above-mentioned research findings require a complete re-thinking of what a healthy diet would be. The villain turned out to NOT be saturated fat (meat, eggs, butter and avocado), but rather TRANS fat (margarine, hydrogenated polyunsaturated fatty acids) and I agree with the FDA that this should be abolished.  Trans fat is full of free radicals oxidizing LDL cholesterol, which we just learnt is causing hardening of arteries. It is sugar and starches that turned out to be the main villain. Omega-6 fatty acids, found in safflower oil, sun flower oil, grape seed oil and canola oil are bad for you also as they lead to inflammation through the arachidonic acid system in the body. Conversely flaxseed oil, omega-3 fatty acids (EPA and DHA) derived from fish oil are very protective (anti-inflammatory) oils, as is olive oil and coconut oil. These latter two are anti-inflammatory monounsaturated fatty acids. Keep in mind that you want to change the ratio of omega-3 to omega-6 fatty acids more in the direction of omega-3 fatty acids, so that the ratio will be between 1:1 and 1:3. Most Americans are exposed to ratios of 1:8 to 1:16 (too many omega-6 fatty acids in fast food and processed foods), which leads to inflammation of the arteries as well.

The new “heart and brain healthy diet” consists of no refined carbohydrates (sugar and starch), but about 45% complex carbohydrates (organic vegetables like broccoli, spinach, cauliflower, Brussels sprouts, peppers, onions, garlic, peppers, Swiss chard, zucchini, asparagus etc.), 20 % protein and 35% saturated and other fats like omega-3 (1:3 mix with omega-6) fatty acids and monounsaturated fats (like olive oil or coconut oil).

According to Ref.1 you can even eat butter, lard and other animal fats provided they come from clean (not antibiotic or bovine growth hormone treated) animals. Dr. Perlmutter (Ref.1) points out that even extreme diets like the Inuit diet with 80% saturated fat and 20% protein leads to longevity with healthy arteries. The patients who died in the many trials including the Framingham Study did so, because of free radicals from sugar, starch and wheat. Wheat contains the addictive gliadin molecule (part of gluten), which makes people eat more sweets and starchy foods. The liver turns the extra calories into visceral fat deposits that in turn cause the release of cytokines like tumor necrosis factor alpha (TNF alpha) and COX-2 enzymes.

This causes inflammation, heart attacks, strokes and cancer.

Contrary to what Big Pharma wants you to know cholesterol is an anti-inflammatory, LDL is a cholesterol transporter (provided it is not oxidized) and HDL is protective of hardening of the arteries as long as the “ratio of total cholesterol to HDL cholesterol” is less than 3.4 for males and 3.3 for females. This is the cholesterol risk ratio used by cardiologists to determine the risk of coronary artery disease. The average risk of this ratio for Americans is 5.0 for males and 4.4 for females. The ideal ratio to strive for is the “1/2 average risk” ratio of 3.4 for males and 3.3 for women (Ref.2).

Paradigm shift in causation of heart attacks and strokes, but also of cancer, and neurological diseases

As pointed out in Ref. 1 there has been a paradigm shift in our thinking about what causes inflammation and what causes all of the major diseases including premature aging. Many physicians are not up to date in this new thinking although it has been in the medical literature since about 1995. In my colleagues’ defense I like to say that they are busy people and they do not always have the time to do their continuing education. However, it is imperative that the public learns about this paradigm shift as it affects literally everyone. In my YouTube video on the home page of www.nethealthbook.com I have talked about this new thinking in the summer of 2012. Now we are learning that there is an anti-inflammatory, cholesterol containing, fat rich diet without refined carbs, but containing ample complex carbs, which is a modified zone diet or a modified Mediterranean diet that will prevent all these diseases. At the same time it is a weight loss diet as cholesterol and fat in your diet stops the liver from producing lipids and triglycerides and helps you to lose weight. Critics will say that it sounds too good to be true, but I agree with Dr. Perlmutter and Dr. Davis, both of whom have provided ample evidence that it is true. Try some of their recipes. Just read Ref. 1 and 2, where recipes are listed in the back part of their books. Or try the recipes I listed for one day in this blog. I am publishing a book entitled “A Survivor’s Guide To Successful Aging” through Amazon.com, which will come out later in early 2014 where you can find recipes for 1 week in the last chapter.

Conclusion

There has been a paradigm shift in the thinking of how hardening of the arteries is caused. Now it is known that an inflammatory process causes it. It is an overindulgence in sugar, starch and wheat products that causes the liver to produce lipids, cholesterol and leads to the “wheat belly” and the “grain brain”. All of this causes cytokines to bring about an inflammatory reaction that affects the lining of arteries causing heart attacks, strokes, but also Parkinson’s disease, MS, autism, asthma, arthritis, epilepsy, Lou Gehrig disease and Alzheimer’s disease (Ref.1). The inflammation does not stop there. If you keep up the high carb/low fat diet, it will lead to various cancers (Ref. 1 and 3). The solution is a diet high in healthy fats (I would call it a low carb/medium high healthy fat diet) as outlined above consisting of 30 to 35% healthy fat, 20% of protein and 45 to 50% of complex carbs, but none of the refined carbs. I have followed such a diet since 2001. I am enjoying that I can now eat  a reasonable amount of healthy fats, which I was not aware of being allowed before I read Ref. 1 and 3, but I continue with the antioxidant vitamins and anti-inflammatory supplements to prevent LDL oxidization. I hope that many of you can benefit from prevention so you can enjoy a healthy life without being a victim of illness or disability.

Treatment For Alzheimer’s Failed, But Prevention Succeeds

Recently another news story about a failed drug against Alzheimer’s disease (AD) went through the news media as shown in this link.

Donepezil, galantamine, rivastigmine and memantine are the most common drugs used to attempt to treat Alzheimer’s as this review explains. None of these drugs are a real breakthrough with regard to truly curing AD, as the drugs only achieve a few months of delay in the eventual deterioration of the AD patient’s symptoms. On the other hand there is an overwhelming accumulation of data in the last few years showing that many different factors can prevent AD and dementia. Below I am reviewing all these preventative factors and steps.

Genetic and epigenetic factors in Alzheimer’s disease

Early onset Alzheimer’s disease occurs between 30 and 60 years of age. It is due to a genetic predisposition (mutations on genes of chromosomes 1, 14 and 21). Only about 5% of all AD cases are caused this way. The remaining 95% of Alzheimer’s cases are due to late-onset Alzheimer’s disease. Here the causation is due to a combination of genetic, environmental and lifestyle factors. One genetic risk factor in this group is important, namely the apolipoprotein E gene (APOE), which is located on chromosome 19. There are several forms of APOE as this review explains. It also states that there is so much variation between the various APOE forms and even the worst form of this does not necessarily mean that the person who has this will come down with late-onset Alzheimer’s disease. So APOE is presently only used in research projects. Your doctor will only order genetic tests in people who have a strong family history of early onset AD.

There is another genetic marker, the CYP46 gene that was found to be present in some late-onset AD patients. If it is combined in a patient with the APOE gene, there is a much higher chance of developing AD as this review shows.

Epigenetic factors are probably more important than genetic factors for most cases of late-onset AD, as this review explains. Another review came to the same conclusion.

What are epigenetic factors? Exercising, replacing missing hormones, using a calorie restricted, only 15-20% fat containing diet; and taking supplements as listed below that will keep harmful genes in the “off” position and protective genes in the “on” position. Taking these preventative steps is probably more powerful than using any of the presently available medications mentioned above.

Exercise, diet, control blood pressure

As already mentioned, these are some of the powerful epigenetic factors that will prevent AD down the road. Controlling blood pressure has long been known to improve cognitive function. It is now evident that there seems to be a problem with microcirculation in brain tissue before it comes to neurodegenerative changes of AD and the underlying deficiency in nitric oxide production in the lining of the diseased arteries. Other research has shown that a lack of nitric oxide (NO) production is also the underlying problem with hypertension.

Green vegetables such as kale, spinach, also cabbage varieties and red beets are a source of nitric oxide and have also been shown to prevent AD at the same time.

Add to this exercise and you have a winning combination for the prevention of AD. You guessed right: exercise increases NO production from he lining of your arteries. When people age their lining of the arteries does not produce as much NO as in younger years. However, there is a supplement available, Neo40 Daily, that can be taken twice a day to compensate for this.

Here is another report about a 30% to 40% reduction in the incidence of AD when people do regular, simple exercises.

More good news about fruit and vegetables: tomatoes, watermelons, pink guava, pink grapefruit, papaya, apricot and other fruit all contain lycopenes, which have been shown to prevent AD.

Recently a new testing tool in combination with a PET scan of the brain has been developed, which may help the treating physicians to assess improvement or deterioration of an AD patient objectively using this method. However, this is still considered to be only a research tool at this time.

Supplements to prevent Alzheimer’s disease

The following brain-specific nutrients play a part in the prevention and treatment of AD (according to Ref.1):

1. B-vitamins: they are important to support the energy metabolism of brain cells.

2. Vitamin C: this has antioxidant properties and prevents brain cells and supportive glia cells from oxidizing.

3. Vitamin E in the form of mixed tocopherols: together with vitamin C has been shown to prevent Alzheimer’s disease

4. Phosphatidylserine (PS), with an intake of up to 300mg/day: counteracts and prevents memory loss.

5. Coenzyme Q10 (ubiquinone), 100mg/day (it would be safe to take 400 mg per day, which is also cardio protective): stabilizes the mitochondria of brain cells and heart muscle cells. It is a powerful neuroprotective agent and supports ATP production (energy metabolism of brain cells).

6. Ginkgo (Ginkgo biloba), at a dose up to 240mg/day: increases micro vascular circulation, neutralizes free radicals from oxidation and improves short-term memory.

Hormones to prevent Alzheimer’s disease

According to Ref. 1 there are certain hormones that can prevent AD: DHEA, pregnenolone, estrogen (bioidentical estrogen only).

  1. DHEA is persistently low in AD patients and replacement with DHEA at 50 mg daily has shown improvements in muscle strength and energy of AD patients.
  2. Pregnenolone has been shown to be a powerful memory enhancer in animals and humans alike.
  3. Estrogen, if taken as bioidentical estrogen cream (Bi-Est) can improve brain function. Estrogen is a strong epigenetic switch that keeps a woman mentally younger for longer, but has to be balanced with bioidentical progesterone cream to prevent breast cancer and uterine cancer. A study showed that estrogen replacement early in menopause will cut down on the heart attack rates, but it is also known, particularly when given as bioidentical hormone cream to prevent AD.
  4. In addition progesterone has been described to be of value in the aging woman to preserve brain metabolism.
  5. Testosterone is known to protect against Alzheimer’s disease in the aging male.
  6. Melatonin at a starting dose of 1 mg to 3 mg at bedtime often helps to restore the disturbed sleep pattern, but also augments the effects of the other hormones (Ref.1).

Removal of toxins, particularly mercury

Mercury is extremely toxic in minute amounts and affects brain cells preferentially. Intravenous vitamin C/glutathione treatments as described in this blog will remove mercury from your system including the brain.

It may take 20 to 30 such treatments in weekly intervals followed by a maintenance program every two to three weeks to remove mercury from the body.

Other heavy metals can accumulate in the brain as well and must be removed. This is described here in more detail.

Conclusion

There have been major breakthroughs in prevention of Alzheimer’s disease and dementia over the past few years, many unnoticed by the media. The search is still on for an effective drug that would treat AD when it is present. However, this may be 10 or 15 years away and we cannot afford to wait that long. Instead I suggest that people should embrace the concept of preventing AD by using as many of the factors described above. Both at the 2011 and the 2012 Anti-Aging Conferences in Las Vegas several speakers pointed out that a combination of several preventative factors will be much more effective than one factor alone and they estimated that about 80% of AD could be prevented this way.

You often hear that chelation could be done effectively using home remedies. Is that true?

The standard chelation detoxification

I like to mention in the beginning that the proven way to reduce heavy metals in the blood (typically mercury and lead) is by intravenous chelating agents such as EDTA. However, the lowering of calcium levels as a severe side effect limits the application of it. There are also blood-thinning side effects to consider. EDTA is a chemically synthesized compound, not a natural substance. Conversely, vitamin C and Glutathione are both antioxidant substances that the body knows; they are non-toxic and can be used more easily intravenously to remove heavy metals like lead and mercury with fewer side effects than EDTA. Although I think that EDTA has a place in the hands of those who are knowledgeable about the side effects, the vitamin C/Glutathione combination is probably a more physiological detoxification method as glutathione is synthesized by the liver to detoxify our bodies. Intravenous chelation is expensive, requires access to a vein and may not be a suitable way for many people to detoxify. There are natural ways to detox for those who cannot afford chelation or cannot chelate for other health reasons.  The major detoxification organs are: the liver, the kidneys, the gut, the lungs and the skin.

What about oral methods to detoxify?

Several methods of cleansing are fasting, the major cleanse or the raw food cleanse. I would not advise to do strict fasting without fluid intake as it takes fluid intake to be able to dissolve any released toxins into urine, feces, invisible fluid from exhaled air and nasal discharge. Next there is the “master cleanse” with lemon juice, maple syrup and cayenne pepper as indicated in the link above. Some people like trendy procedures that are written up in a magazine or in a self-help book. I do not like it, as it reminds me too much of a cookbook approach.

I feel differently about a raw food cleanse as I will explain. First, I like to point out that raw food is not easily digested as your gut absorbs only about 30 to 40% of the nutrients. The cell walls of the vegetables you use are the barrier towards absorption. This is much different, if you put the raw fruit and vegetables into a blender with a high power motor. (There are several brands like the BlendTec or the Vitamix.) The powerful blending process breaks up the cell walls and releases the content of the plant cells including their enzymes and nutrients, so that 80% of the nutrients are absorbed in your gut.

If you use organic ingredients (they do not contain toxins, artificial fertilizer residues etc.) you cannot go wrong! Use spinach, kale, banana, mango, greens, lemon juice, and for fat add some nuts like walnuts, Macadamia nuts, almonds (provided you are not allergic to them). With the help of a powerful blender all this will turn into a liquid drink that actually tastes OK. For protein supplementation I would also add some protein supplement like vegan protein from the health food store, whey protein or egg white protein (good to rotate these protein supplements). This mix is a complete nutritional program as it contains complex carbohydrates from fruit and vegetables, fat from nuts, protein from the protein supplement and fiber (from the whole vegetables and fruit). You will not get hunger pangs as with a fast or the master cleanse. Use the signs of your body as guidance. If you feel energized after 5 days, stop then and return to your normal food intake (zone type diet, a Mediterranean diet or South Beach diet as explained below). Some people have the will power to do 7 to 10 days of the liquid diet described. Good for them, at least they do not starve themselves as the calories and total nutrient content are there while they detoxify. What are the agents that lead to the detoxification process? It is the enzymes released from the fruit and vegetables, the lack of toxins as you only consume organic ingredients , the extra vitamin C from the food and the glutathione contributed from your liver that are working together.

Are there supplements that can help you to detoxify?

Chlorella powder, which you can buy in health food stores, is one of the few supplements that can detoxify your body from heavy metals. As Dr. Mercola describes that in Japan chlorella powder is one of the most popular supplements to detoxify. It is difficult to get a complete, non-biased picture about chlorella. I did an extensive research in MD Consult about the scientific evidence for detoxification by chlorella in humans. Unfortunately the search results came back only for experiments with mice and rats, but there were no human detox results. Perhaps the Wikipedia description about the history of algae and chlorella as a possible food supplement sheds some light on the difficulties getting real hard data on chlorella detoxification. In rats that were deliberately poisoned with cadmium (a heavy toxic metal) no convincing detoxification with chlorella could be detected when cadmium poisoning was stopped. However, the article goes on to say that chlorella did prevent absorption of cadmium from the intestines to a certain extent (in rats).

Liver detoxification and colonic detoxification

Dr. Max Gerson invented coffee enemas many years ago when he treated end stage cancer patients with natural methods. He found that when he detoxified them with raw juices, many cancer patients died from the toxic breakdown products of dying tumor cells. So he was in dire need of a procedure that would remove the toxic tumor substances efficiently.  This is when coffee enemas were used. As the link above describes, coffee given through the colon as an enema (we would perhaps call it “coffee colonics” today) stimulates the liver and the bile flow thus detoxifying the blood effectively of toxic materials. In addition the secretory capability of the large surface of the colon wall also helps the detoxification process. Juicing in combination with coffee enemas improved Dr. Gerson’s end stage cancer cure rates dramatically. Subsequently, Dr. Kelley developed his nutritional-metabolic therapy for end stage cancer patients where he added large amounts of pancreatic enzymes in addition to coffee enemas. Dr. Denis Burkitt is credited for recognizing the importance of fiber in the diet. He noticed that there was a striking difference between the colon cancer rates in England versus the rates in Africa. He analyzed food habits and came to the conclusion that back home there was not enough fiber consumed. A large study done by the Harvard Medical School showed that it was not so much the fiber that helped to prevent colon cancer. Further large scale studies were done and it was shown that a diet high in vegetables, fruits, and whole grains was what was responsible for a reduction in colon cancer rates. This type of diet will also help detoxify your system from carcinogenic substances in general and from other toxins as the soluble fiber inside the gut will attach to it and go down the toilet instead of being reabsorbed in the colon into your system causing cancer.

Skin detoxification

The skin is the largest body organ with a lot of skin surface where skin pores can help detoxify under the right circumstances. This can be achieved with infrared saunas, with exercise that leads to production of sweat and by soaking in Epsom salt baths. Traditionally this has been done for centuries in the European spas, originally described by Sebastian Kneipp. The medical establishment in Europe (France, England, Germany, Austria), unlike American physicians, embraced the concept of natural therapies under the term “balneology”, at least for a number of decades. But  overuse by patients (abusing the system), badmouthing the relatively weak effect of detoxifying by Big Pharma and lack of funds from the health insurance companies put a damper on his movement. Part of this approach was the use of skin detoxification with healing baths (using Epsom salt and other salts) and physical exercise to the point of sweating. In addition “Waechselbaeder” according to Sebastian Kneipp (alternating hot and cold baths) were also used to stimulate the circulation and the immune system. The major component of Epsom salt is magnesium sulfate, which can be absorbed through the skin to a certain degree. So, some of the healing effect of Epsom salt baths may have come from an indirect balancing of low blood magnesium and the normalization of many metabolic processes that require magnesium as co-factors. Here is another, more vernacular description of Epsom salt use. Some of the assumptions such as improvement of diabetes, improvement of digestive absorption or relief from migraine headaches may be a combination of exaggeration and placebo effect rather than reality.

Kidney detoxification

The kidneys along with the liver are the major, natural detoxification organs of the body. However, they need enough fluids to dissolve water-soluble toxins and eliminate them from the body through the urine. Clean water should be consumed intermittently during the day (reverse osmosis water in glass bottles or BPA free bottled water). Because alcohol is a cell poison damaging the vital organs like the brain, heart, liver and kidneys it is best to minimize any alcohol intake to the absolute minimum (best to avoid alcohol altogether). The main filtration devices in the kidneys are the glomeruli, little packages of convoluted capillaries, which filter the blood several times per day. High salt intake, too much sugar and too much starch interfere with normal function of the glomeruli. Insulin resistance as is the case with metabolic syndrome and diabetes (often associated with obesity) will damage the filtration devices of the kidneys and cause toxin accumulation. To prevent damage of the kidney capillaries you need a healthy, basic diet like the Zone diet, South Beach diet or the Mediterranean diet as mentioned in this link.

This will keep fat deposits out of your arteries and the capillaries of the glomeruli of your kidneys, so the filtration process continues to work until a ripe old age. Your doctor can order tests (creatinine clearance) to assess whether the filtration capacity of your kidneys is normal.

Many toxins are fat-soluble and are stored in the fatty tissues. When you lose weight, you will need to drink more fluids to get rid of the water-soluble toxins through the kidneys and use coffee enemas to rid yourself of fat-soluble toxins (through bile and bowel movements).

There are a lot of websites that want to sell you herbs that should cleanse your system. They have a marginal effect, but I would stress that you want to adopt one of the diets mentioned above first to start with a healthy baseline. Such herbs as Buchu (Agathosma Betulina), Burdock, Echinacea and Yellow Dock Root (Rumex Crispus) are supposed to help the kidneys to detoxify. I am not certain whether there is medical proof for this.

Conclusion

Detoxification starts with adopting healthy food and lifestyle habits first. A low carb, low fat type diet as indicated (zone diet, a Mediterranean diet or South Beach diet) will be the footing from which the other detoxification methods will work. Some of the toxins will leave you when you work out and sweat. More will leave you when you enjoy an Epsom salt bath. This will give you some extra magnesium, which in turn will help to detoxify your system through several biochemical reactions where magnesium is a co-factor. Colonics or enemas will help remove toxins through your colon and they are more effective when coffee enemas are used (stimulation of your liver through the splanchnic nerves).

Infrared saunas can help to mobilize toxins and detoxify them through your skin. Take ample amounts of fluids as this will help remove some toxins through the kidneys and the urinary system. If major heavy metal poisoning were detected, the traditional intravenous chelation treatments described at the beginning of this blog would be more recommendable. A naturopathic physician or A4M physician (anti-aging physician) could advice you what is best in your case. Overall the thought is that by removing toxins the mitochondria in our cells, particularly in the brain, heart, liver, and kidneys can work more effectively giving you more energy and preventing the major diseases like cancer, cardiovascular disease (heart attacks and strokes), diabetes, arthritis and loss of cognitive function (Alzheimer’s disease and dementia).

February is heart month every year. So I thought why not review what is new regarding heart health in the last 15 years and put it into perspective. I will start with a review of the older teaching about heart disease and then explain the paradigm shift in medical thinking and how this has changed the approach to heart disease prevention. The anatomy of the heart including coronary arteries and the heart valves has not changed over the years. The heart has always been at the center of life and will remain there. It used to be thought that when a person ages one should expect to get problems with high cholesterol, which would be the cause of hardening of coronary arteries of the heart until one day the person would experience a heart attack from the closing of one or more of the three coronary arteries. Cardiologists can then offer an arteriogram, place a stent to reopen any blocked coronary artery and the patient would be OK for another 5 to 10 years. Alternatively, coronary bypass surgery can be offered by a cardiovascular surgeon to revascularize the coronary arteries. In the mid 1990’s all this changed with the realization that 50% of heart attacks happened in patients who had normal cholesterol levels. Research showed that it was inflammation of the heart vessels followed by subsequent blockage what caused heart attacks. Since then a great deal of research in animal models and with humans showed that a lot can be done in the area of prevention of heart attacks and that very little can be done with regard to improving cure rates when damage to the heart muscle has already occurred. The paradigm shift is in the understanding of what leads to a heart attack. We now know that too much sugar, too many starchy foods and too much animal fat will lead to inflammation of the arteries including the coronary arteries. The reason is that faulty nutrition leads to a lack of omega-3 fatty acids and a surplus of omega-6 fatty acids. This starts the inflammatory cycle, which causes inflammation in the arterial walls followed by rising LDL cholesterol (that’s the bad cholesterol) and falling HDL cholesterol levels (that’s the good cholesterol). Associated with this is a lowering of nitric oxide production in the lining of the arterial walls, which leads to a narrowing of the arterial opening and simultaneous development of high blood pressure. Research of the metabolism of cells, particularly the subunits of cells called mitochondria, shed a new light on the heart as well. It turns out that the mitochondria, which are the energy producing subunits of the cells are abundantly present in those organs that have a high metabolism, such as the heart, brain, liver and kidneys.

This newer knowledge allows the prevention-oriented physician to help patients not to get heart disease on the first place by preventing inflammation of the arteries, by adding nitric oxide as a supplement, by changing the food composition, by intervening at the mitochondrial level with the help of supplements and by a regular exercise program. Over the years there have been impressive clinical trials that show that these preventative means when taken together can add 10 to 20 years of productive life without any disability. In the following I am going to describe the rationale for each of these life-prolonging steps:

  1. Preventing inflammation of the arteries: at the moment many people eat the standard North American diet consisting of foods with too much sugar, processed foods with animal fat and lots of pasta. If people switch over to a diet rich in leafy-green vegetables (kale, spinach, Swiss chard) and lean pork, turkey and chicken, this will change the omega-3 to omega-6 ratio in favor of omega-3 fatty acids. This has a powerful effect on your body, as the surplus omega-3 fatty acids will suppress any inflammation in your blood vessels, which prevents heart attacks. If you also eat as much organic food as possible, you will in addition reduce the toxic load in your body from heavy metals like lead and mercury and chemicals like herbicides and insecticides that often are contained in regular non-organic foods. By cutting out sugar and refined carbohydrates fasting insulin levels and triglyceride levels fall. This prevents diabetes and keeps your arteries open longer.
  2. By adding nitric oxide as a supplement such as “Neo40 daily” or “Stay young” (both of these supplements have hawthorn and red beet extract in them) the lining of the arteries gets a boost of nitric oxide production thereby lowering your blood pressure and widening the arteries in your body including the coronary arteries. The result is more oxygen and nutrients for your heart cells.   5. A regular exercise program rounds up your heart support program. A regular exercise program by itself has been shown to be powerful heart attack prevention by cutting heart attack rates into half when compared to a non-exercise control group. Exercise builds up your heart muscle reserves and prevents clogging up of coronary arteries.
  6. Lifestyle changes can have a powerful effect in terms of preventing heart attacks. Everybody knows that those who smoke will not live as long as those who don’t. Smoking accelerates hardening of the arteries and causes not only heart attacks, but also cancer. Perhaps less known is the fact that alcohol can poison mitochondria. Due to the fact that wine also contains bioflavonoids, there have been statistics that showed that 1 glass of wine for women and two glasses of wine for men could prolong life. The wine industry was quick to exploit these statistics for the benefit of their sales. Fact is that even small doses of alcohol are a cell poison. Bioflavonoids are much more effective when taken as part of your daily supplements (resveratrol capsules) and it is much healthier for your heart and other body parts, if you do not consume any alcohol at all.

Originally the Framingham study showed that high LDL cholesterol was associated with heart attacks. But now we know that it is the overconsumption of sugar, high fructose corn syrup and refined carbohydrates in processed foods as well as animal fat overconsumption (mostly omega-6 fatty acids) that lead to inflammation of the lining of the arteries including LDL cholesterol overproduction from the liver. The focus has switched from lowering cholesterol and triglycerides to reducing and preventing inflammation and to supporting the mitochondria of the heart muscle cells. Simple steps as outlined above have the power to prevent about 85% or more of heart attacks. They work by treating insulin resistance through the diet changes, which in turn lowers fasting insulin levels, blood sugars and triglycerides as well as cholesterol. Inflammation is kept at bay. You prevent heart disease and in addition also arthritis, high blood pressure, strokes and Alzheimer’s disease. One of the side effects is weight loss, extra energy and a sense of wellbeing.

What a Wonderful World

Recently I traveled from Palm Springs to the Caribbean and back. There were connecting flights and there was waiting at various airports, so I had lots of time to watch people and to observe what was happening around me.  Louis Armstrong’s song (1967) “What a Wonderful World“ came to mind , and I thought that this would be a fitting title for this Blog. Earlier we had come from Canada escaping the winter. The deep blue sky of Southern California and the sight of palm trees (instead of pine trees) is something that makes our hearts beat faster. The desert is a special place. We had friends join us for a week and we had visited Joshua Tree Park with the grotesque looking rock formations. During the flight it was interesting to see the landscape, as we crossed the desert areas of Arizona and New Mexico, seeing what difference people make when large areas are irrigated and the desert transforms into lush, green areas. It is also very visible, where the desert has taken back the land that no longer is irrigated.

We came to Dallas Fort Worth and the sky was clear. We traveled on to Miami and the sky was showing signs of pollution, although it was a sunny day. After our take-off from Miami we saw the ocean. I have flown over that region many times before, but this time I detected oil slicks on the surface of the ocean of the Gulf of Mexico, leftovers from previous oil spills. So, the Armstrong song of a “wonderful world” came back to me in a different context. I looked at the landscape and what industries can do to it. Erroneously we had just seen several BP commercials while waiting for our plane at the airport where BP was congratulating itself for the role it plays in cleaning up the environment having spent several billion dollars. But there are still oil slicks…

I looked at the people around me in the plane. More than 35% of them were obese; many of their faces looked sagging and prematurely aged, particularly in women. Males, even middle aged ones looked like they were pregnant (abdominal fat) and often their hair was receding, thinning on top and quite a few were bald. All of the texts I had read about anti-aging medicine came back to me. Too bad that people were eating the wrong foods and obviously did nothing to counter their built-in aging clock from depleting hormones as we age. I looked at the menu of the airline (I won’t mention the name of the airline, but I can assure you that 10 different airlines would have almost the same menus), but there would only have been one chicken salad that I could have eaten. In the past I tried to order this and I was told that due to popular demand this item was sold out. Instead they wanted to offer me potato chips, cheese and crackers. My wife and I had anticipated this scenario and we had bought a chicken salad and water before we boarded the plane. We also had packed healthy organic energy bars and a trail mix consisting of nuts and raisins to use as snacks during the trip. While travelling we stuck to the same principal of cutting out starches, bread, rice, pasta and only eating fresh vegetables, salads and lean meat (chicken, grass fed beef, ribs, lean pork and veal), which we always do since the fall of 2001.  We also avoid all alcoholic beverages and sugar containing sodas. When we returned to Southern California we were delighted to see that our body compositions when measured with the body composition scales were identical to what they were before the trip.

I think we can all contribute to this wonderful world, if we participate in whatever we can do such as these steps.

  1. End wars because on the long-term they do not lead anywhere to solve conflicts (in my lifetime I am thinking about the Vietnam war, long-winded Ireland crisis, the Korean war and the German reunification at the end of the Cold War). Right now there is the Middle East conflict, which screams for a peaceful solution. As we are conscious about the devastation that is caused by wars, we have to start with ourselves. We have to resolve our own conflicts that may be present in our own lives. Tolerance, acceptance and forgiveness are the tools.
  2. Pollution needs to be addressed by the US and all of the world’s countries (including Canada where I live most of the time). This means that anti-pollution devices need to be installed in industrial plants and chimneys. Recycling needs to be done on a larger scale. China and India and other emerging market countries need to be taught how these new anti-pollution measures work. This is an ongoing project, but we need more co-operations between government, industry and countries all around the globe. Also we have to start with our own behavior: we can become more aware of reusing and recycling instead of creating more waste in our landfills.
  3. What can we do to make us part of this wonderful world? We need to become better caretakers of our bodies. Instead of looking at quantity we must look at quality in choosing  natural food wherever possible. Growing up in Germany after the Second World War in the 1960’s and early 1970’s made me witness that high consumption of fat, sugar and starchy foods (potatoes, pasta and bread) caused people to age prematurely and get heart attacks, strokes, high blood pressure, arthritis, obesity, diabetes and cancer. At that time the “Wirtschaftswunder” (translated into English it means “economic miracle”) had propelled Germany into a nation of  high consumers. During the war they had been poor and often went hungry, they were slim and heart attacks were at an all-time low. After the war they made up for times of deprivation and overindulged:  pretzels, buns, bread, butter, French fries, sweets, cakes, cookies, jams, chocolates, pralines-everything was consumed with gusto!  What happened to Germany in the 1960’s and 1970’s is happening again right now in front of our eyes with the obesity wave in the US, Canada and all the other civilized countries around the world. Food companies have been very successful with their advertizing through the media. Already kids get hooked to the wrong foods! Hyperinsulinism will ensure that we get hungry every two or three hours. Refined carbs and extra calories are turned into fatty acids by the liver and stored as fat. It shows that we have to resist the wrong food temptation and cut out all refined carbs. It is healthier to stick to salads and vegetables like broccoli, cauliflower, asparagus, and spinach and eat a small piece of lean meat with it. Have probiotics as plain yoghurt (0% to 2% fat). If you need a sweetener, use a small amount of Stevia, which is a natural sweetener that leaves your body chemistry untouched. Have some fruit as a dessert like blueberries, cherries or strawberries. Eat an apple, the occasional grape. Drink lots of purified water or mineral water.
  4. Buy ORGANIC food whenever possible. Most of the vegetables and fruit have been treated with insecticides, which contain residuals in them. When these are ingested, they act like estrogenic substances causing breast cancer in women and prostate cancer in men. The safest in our society is to stick to organic foods. More expensive, but the best insurance against future disease. Question politicians whenever possible to make yourself heard. You want unadulterated food and water. And as I’m writing about water, have a water filter under the kitchen sink with a carbon filter or have reversed osmosis to get rid of chloride or fluoride from the city water. This is what you use to cook your food. You may want to take an iodine tablet once or twice a day to counteract the negative effects of chlorine from having a bath or shower (chlorine gets absorbed through the skin). Why? Because chlorine and fluoride can displace the iodine of the thyroid hormones and make you hypothyroid.
  5. Exercise every day. Nobody gets fit in their muscles from sitting in front of the TV for hours or from spending hours and hours of computer work. If you have to, counterbalance this with an exercise program of 1 hour per day. Walk 30 minutes on a treadmill and do 30 minutes of weights or use specific exercise machines in a gym to strengthen your upper and lower extremity muscles.
  6. Did I mention hormones? Yes, I did above when I mentioned depleting hormones as we age. It is known now for some time that each hormone of the body has its own peak in life and then it declines in production as we age. Or should I rather say, we age when these hormones decline? I like the latter way of wording it, because we can measure hormone levels and when one of the hormones is too low, we can replace it with a bio-identical hormone and the person’s energy comes back and whatever function was missing is restored. This is in essence what anti-aging medicine does. Many conservative physicians and clinics do not like to hear this. Big Pharma does not like to hear this, as I am talking about replacing hormones in the body with bio-identical hormones, not with patented cheap copies that are mass manufactured, sold at inflated prices, but are no fit to the hormone receptors in the body and therefore are dangerous. The artificial drugs cause heart attacks, strokes and cancer as the Women’s Health Initiative has shown in 2002.
  7. What should have been done with the people I watched on the plane? They should have been hormone tested by their physicians. Many of the overweight or obese patients would likely have had high fasting insulin levels. The extra fat does not just sit there; it is a hormone producing factory for inflammatory compounds and estrogen-like substances. This causes heart attacks and strokes in women. It causes prostate cancer and hair loss in males as well as impotence (“erectile dysfunction”). What I said under point 3, 4 and 5 would help these people that I met. When fat is lost through changes in the diet and when an exercise program is started, the body mass index slowly comes down as fat melts away. The estrogen production comes down, the inflammatory substances abate. The person feels more energetic and may even think straighter. One special test is a saliva hormone test that looks at 5 steroid hormones: DHEA-S (storage form of DHEA), testosterone, estradiol, progesterone and cortisol. Every man and every woman needs a certain balance between these hormones and this test should be done when there is a change in energy or appearance (hair loss) somewhere when we are 35 to 40 years. In women it is important that the progesterone level is 200 times fold higher than the estradiol level (progesterone/estradiol ratio) or she is at risk of developing breast cancer and other cancers (ovary, colon etc.). In a man it is important that his testosterone to estradiol ratio is higher than 20 to 1. This protects him from cancer of the prostate or other cancers. Whatever is missing can be prescribed by the physician or a knowledgeable naturopath who is familiar with the use of bio-identical hormone creams. This program can prevent diseases like osteoporosis, diabetes, cancer and arthritis. It also prevents disabilities.

So with a view towards a new year (2013) and with a sense of leaving 2012 behind, I am looking forward to the time when more people can see Louis Armstrong’s vision of a “Wonderful World”.

Eat Your Veggies To Protect Your Eyes

A study at Brigham and Women’s Hospital in Boston has shown that nutrition impacts eye health. Over a stretch of 10 years Dr. William Christen followed a group of 35,551 health professionals age 45 and older. They provided him with detailed information about their dietary habits and vitamin supplements-they were permitted to take multivitamin but were requested not to take vitamin A, vitamin E or beta-carotene. None of them had cataracts in the beginning of the study, but 2,031 did develop cataracts during the follow up period. Dr. Christen and his team analyzed the data and found that those individuals who were the highest consumers of carotenoids- individuals with an intake of 6,617 mcg of lutein and zeaxanthin- were 18% less likely to develop cataracts than those who consumed only 1,177 mcg per day. Also, the group that consumed higher amounts of vitamin E (intakes of about 262.4 mg per day) was 14% less likely to develop cataracts. Lutein is a substance that is found in high concentration in eye tissue. It is readily available in many foods, such as green and yellow vegetables, yellow-fleshed fruit and in egg yolks.

New research from the National eye Institute in Baltimore has also confirmed the benefits of carotenoids for healthy eyes. Lutein and zeaxanthin offer protection against age-related macular degeneration. There is no need to shop for supplements. Just bring on the green vegetables: broccoli, brussels sprouts, kale, collard greens, and spinach. Add some corn, the spice saffron and some eggs, and enjoy the taste and the health benefits.

Spinach has traditionally been regarded as a healthy, green leafy vegetable and a valuable source of vitamins and minerals, in particular iron. The tedious chore of cleaning the tender greens and removing soil and sand traces has been taken care of by packinghouses. As a result, the consumer could purchase ready to eat spinach in plastic bags. These greens were a welcome ingredient for spinach salads or other dishes.
Lately all spinach has been recalled from the world’s largest producer of organic produce. Natural Selection Food has recalled a total of 34 brands that were distributed nationwide, and some of which were available also in Canada. Consumers are still being warned not to eat fresh spinach from the U.S., even though there have been no reported cases of ill effects or diseases in Canada itself. Problems have surfaced in September in form of food borne illness in the U.S. The culprit seems to be contamination with E. coli 0157:H7. Food borne illness can be serious. So far there have been 109 cases of illness in the U.S. and possibly two deaths. The worst affected area so far is Wisconsin, where 29 illnesses were reported and one person died of the disease.
As a result of this alert, salad mixes that contained a variety of greens including spinach leaves have also been pulled from the shelf. It should be mentioned that washing the spinach leaves does not make it safe to consume, as the E.coli bacteria stick to the leaves.
While it seems good-bye to spinach leaves for now, it remains important to eat your greens. Researchers at University of California in Los Angeles and colleagues at Louisiana State University analyzed the salad consumption based on the intake of salad, raw vegetables and salad dressing on 9,406 women and 8,282 men. The researchers also found from their studies that daily consumption of salad and raw vegetables is not the norm in any population group and even less prevalent among African Americans.

There were data from lab tests on serum nutrient levels, and it showed that consumption of salads was positively associated with above-median serum micronutrient levels of folic acid, vitamin C and E, lycopene, and alpha carotene and beta carotene. All of these nutrients are important for healthy daily functioning. They are weapons that help fight infection, heart disease and cancers. The consumption of salad and raw vegetables remains the most effective strategy for increasing the intake of important nutrients.
